Deep into that darkness peering…

I have 2 feet of water in my basement. I knew the basement flooded sometimes, but I've been periodically checking it to make sure it wasn't flooded. I have the pump working now. Man that thing works slowly. I could hear how hard the rain was coming down last night, but it rained harder last week.

meh.

Oh well. I made tea cookies this afternoon with lavender and lemon grass. They're awesome!
I actually combined two recipes I found on-line and made some adjustments.

Lavender Cookies

2 T culinary lavender flowers
2 T lemongrass
2 cups all-purpose flour
2 teaspoons baking powder
1 pinch of salt
1/2 butter (I used smart balance butter sticks)
1/2 cup sugar
2 eggs (I used Ener-G and apple sauce)
1 tablespoon soy milk
1 teaspoon vanilla

Pre-heat oven to 375ºF.

Stir together flour, baking powder and a pinch of salt. Set aside.

Melt the butter, but be careful not to overheat it, then mix in the sugar. Stir in the Ener_G and apple sauce, and blend into the butter and sugar. Mix in the lavender and lemongrass and then the flour. Drop batter by teaspoonfuls onto cookie sheets. Bake 15 to 20 minutes, or until golden. Bake for about 10 minutes or until golden-brown. Serve with hot tea.

I milled the lemon grass and lavender to make it smoother.
